Lecithin is a food ingredient derived by water degumming the extracted oil of seeds resulting in a mixture of phospholipids in oil. Lecithin is used for applications in human food, animal feed, pharmaceuticals, paints, and other industrial applications. It has emulsification, lubrication and surfactant properties. Lecithin is admitted by the EU as a food additive, designated as E322.
