Erythorbic Acid is a stereoisomer of Ascorbic acid used as an antioxidant in processed foods including cured meats, frozen vegetables and salad bar ingredients where it has largely replaced sulfites as a preservative. In the European Union, Erythorbic Acid is known by E-number E315.
